Golden Fish

Ingredients:

1CBrown rice flour
2largeegg whites
1zestlemon finely grated
66ozskinless, boneless cod pieces (I used 2 Basa fillets)

Method:

Place the flour in a wide, flat dish and season with salt and pepper.
Place the egg whites in a medium bowl and whisk until foamy; add lemon zest and whisk again.
Place a large skillet over medium high heat and add 1/4 inch of oil.
(I used much less oil and a non-stick skillet).
When the oil is hot, dip the fish into the egg white mixture.
Press the fillets into the flour to coat them evenly and on all sides.
Place them in the skillet.
Cook the fish until crisp and golden brown, 4-5 minutes.
Turn and continue cooking until golden on outside and opaque in center.
Remove with slotted spatula and place on a platter covred with paper towels.
Transfer immediately to plates.
(Note) Brown rice flour us available in health food stores and speciality food markets.
This is very delicate and tasty.
