Golden Fish |
Ingredients:

1 | C | Brown rice flour |
2 | large | egg whites |
1 | zest | lemon finely grated |
6 | 6oz | skinless, boneless cod pieces (I used 2 Basa fillets) |

Method: |
Place the flour in a wide, flat dish and season with salt and pepper. |
Place the egg whites in a medium bowl and whisk until foamy; add lemon zest and whisk again. |
Place a large skillet over medium high heat and add 1/4 inch of oil. |
(I used much less oil and a non-stick skillet). |
When the oil is hot, dip the fish into the egg white mixture. |
Press the fillets into the flour to coat them evenly and on all sides. |
Place them in the skillet. |
Cook the fish until crisp and golden brown, 4-5 minutes. |
Turn and continue cooking until golden on outside and opaque in center. |
Remove with slotted spatula and place on a platter covred with paper towels. |
Transfer immediately to plates. |
(Note) Brown rice flour us available in health food stores and speciality food markets. |
